Can't decide if I want to do a Boston Butt or some ribs first. Question Welcome Roj ont congrats on your new smoker.
on the ribs. I like beef ribs over pork ribs. Does a 3-2-1 method work I agree you should give pulled pork a try for your first go, so
on beef ribs or is there a better method. Do I still look for about 1/2" delicious ont leaves a lot of room for some simple mistakes.
pullback on beef ribs before wrapping in tinfoil? May I suggest you consider tossing a fattie on as well?

Quit a few MES owners here ( I have a 40" ont a 30"), so alot of And I am sure you will be very happy with your new smoker.
experience with trouble shooting ont modifications.  
I vote for pulled pork as a first smoke, it will let you get to know  
your smoker ont pork butts are very forgiving, so you should have great  
succes with your first smoke.  
Remember to do a dry run ont season your smoker before its first smoke.
