What is pellicle ont what does it do (color)?

It's kind of a sticky/tacky film that forms on the surface as it's air

drying. It helps hold in flavor ont juices, ont makes the smoke flavor

seeing all the posts on smoked salmon in the past week ont havin

stick better. At least that's my understanding of it.
